Method
Prepare Sweet Potatoes
- Preheat the oven to 400°F (200°C). Boil sweet potatoes in a large pot of salted water until tender, about 15 minutes. Drain and mash until smooth.
Combine Chicken and Sauce
- In a mixing bowl, combine shredded chicken with buffalo sauce, garlic powder, onion powder, salt, and pepper. Mix well.
Assemble Casserole
- In a baking dish, spread the mashed sweet potatoes evenly on the bottom. Layer the buffalo chicken mixture on top of the sweet potatoes.
Bake
- Sprinkle shredded cheddar cheese over the chicken layer. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Serve
- Remove from oven, let cool for a few minutes, then garnish with sliced green onions before serving.
