Ingredients
  

Sweet Potatoes
  • 2 large sweet potatoes peeled and cubed
Buffalo Chicken
  • 2 cups shredded cooked chicken tossed in buffalo sauce
  • 1/2 cup buffalo sauce adjust to taste
Cheese and Toppings
  • 1 cup shredded cheddar cheese for topping
  • 1/4 cup green onions sliced, for garnish
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C). Boil sweet potatoes in a large pot of salted water until tender, about 15 minutes. Drain and mash until smooth.
Combine Chicken and Sauce
  1. In a mixing bowl, combine shredded chicken with buffalo sauce, garlic powder, onion powder, salt, and pepper. Mix well.
Assemble Casserole
  1. In a baking dish, spread the mashed sweet potatoes evenly on the bottom. Layer the buffalo chicken mixture on top of the sweet potatoes.
Bake
  1. Sprinkle shredded cheddar cheese over the chicken layer. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from oven, let cool for a few minutes, then garnish with sliced green onions before serving.

Notes
