Ingredients
  

Sausage and Vegetables
  • 1 lb Cajun sausage sliced
  • 1 cup bell pepper diced
  • 1 cup zucchini sliced
  • 1 cup yellow onion diced
  • 1 cup cherry tomatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon Cajun seasoning adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Ingredients
  1. Slice the Cajun sausage and dice the bell pepper, zucchini, and onion.
  2. Halve the cherry tomatoes and set all the vegetables aside.
Cook the Sausage
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced Cajun sausage and cook until browned, about 5-7 minutes.
Add Vegetables
  1. Add the diced bell pepper, zucchini, and onion to the skillet.
  2. Stir in the Cajun seasoning, garlic powder, salt, and black pepper.
  3. Cook for an additional 10-12 minutes, stirring occasionally, until the vegetables are tender.
Finish and Serve
  1. Add the halved cherry tomatoes and cook for another 2-3 minutes until heated through.
  2. Serve hot and enjoy your Cajun sausage and vegetables!
