Ingredients
  

Cajun Shrimp and Salmon
  • 1 lb large shrimp peeled and deveined
  • 1 lb salmon fillet skinless
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil for cooking
  • 4 cloves garlic minced
Garlic Cream Sauce
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 1 tbsp butter
  • 1 tbsp fresh parsley chopped for garnish
Mashed Potatoes
  • 2 lbs russet potatoes peeled and cubed
  • 1/2 cup milk or cream
  • 4 tbsp butter
Green Beans
  • 1 lb fresh green beans trimmed
  • 1 tbsp olive oil

Method
 

Prepare the Mashed Potatoes
  1. Boil the cubed potatoes in salted water until tender, about 15 minutes.
  2. Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth. Season with salt and pepper to taste.
Cook the Green Beans
  1. Steam the green beans for about 5-7 minutes until tender-crisp.
  2. Toss with olive oil and season with salt.
Cook the Cajun Shrimp and Salmon
  1. In a large skillet, heat olive oil over medium-high heat. Season shrimp and salmon with Cajun seasoning.
  2. Add shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute. Pour in heavy cream and bring to a simmer.
  4. Stir in parmesan cheese and butter, cooking until thickened. Return shrimp and salmon to the skillet to coat in the sauce.
Serve
  1. Plate the mashed potatoes, top with Cajun shrimp and salmon, drizzle with garlic cream sauce, and serve with green beans on the side.

Notes

For a spicier dish, increase the amount of Cajun seasoning. Fresh herbs can be added for extra flavor.
