- In another bowl, combine melted coconut oil, egg, vanilla, and maple syrup.
- Mix wet ingredients into dry ingredients until just combined.
- Fold in grated carrots.
- Scoop dough onto the prepared baking sheet, spacing them apart.
- Bake for 12-15 minutes until the edges are golden.
- Cool on the sheet for 5 minutes, then transfer to a wire rack.
