  • 1 cup instant oats 100g
  • ¾ cup whole wheat flour or gluten-free flour (90g)
  • 1 ½ tsp baking powder
  • 1 ½ tsp ground cinnamon
  • tsp salt
Wet Ingredients
  • 2 tbsp coconut oil or unsalted butter, melted (28g)
  • 1 large egg room temperature
  • 1 tsp vanilla extract
  • ½ cup pure maple syrup room temperature (120mL)
  • ¾ cup freshly grated carrots about 1 medium carrot (68g)

Method
 

Baking
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, mix oats, flour, baking powder, cinnamon, and salt.
  4. In another bowl, combine melted coconut oil, egg, vanilla, and maple syrup.
  5. Mix wet ingredients into dry ingredients until just combined.
  6. Fold in grated carrots.
  7. Scoop dough onto the prepared baking sheet, spacing them apart.
  8. Bake for 12-15 minutes until the edges are golden.
  9. Cool on the sheet for 5 minutes, then transfer to a wire rack.
