Ingredients
  

Apples
  • 4 whole medium-sized apples Granny Smith or Honeycrisp recommended
Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup sour cream optional for creaminess
Topping
  • 1/2 cup oats rolled
  • 1/4 cup brown sugar
  • 1/4 cup butter melted
  • 1 teaspoon cinnamon

Method
 

Prepare the Apples
  1. Preheat the oven to 350°F (175°C).
  2. Core the apples, making sure to leave the bottom intact to hold the filling.
Make the Cheesecake Filling
  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add the sugar, vanilla extract, egg, and sour cream, and mix until well combined.
Stuff the Apples
  1. Fill each cored apple with the cheesecake filling, packing it in gently.
Prepare the Topping
  1. In a separate bowl, combine the oats, brown sugar, melted butter, and cinnamon.
  2. Sprinkle the topping over the stuffed apples.
Bake the Apples
  1. Place the stuffed apples in a baking dish and bake for 25-30 minutes, until the apples are tender.
Serve
  1. Remove from the oven and let cool slightly before serving warm.
