Prepare the Glaze
- In a saucepan over medium heat, combine the cherries, balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper. Bring to a simmer.
- Cook for about 10 minutes, stirring occasionally, until the mixture thickens slightly. Remove from heat and set aside.
Cook the Chicken
- Heat a skillet over medium-high heat. Add a little olive oil if needed.
- Season the chicken breasts with salt and pepper. Place them in the skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown.
Glaze the Chicken
- Once the chicken is cooked, pour the cherry balsamic glaze over the chicken in the skillet.
- Let it simmer for an additional 2-3 minutes, allowing the chicken to absorb the flavors.
Serve
- Remove the chicken from the skillet and serve hot, drizzled with extra glaze if desired.
