Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Cherry Balsamic Glaze
  • 1 cup fresh cherries, pitted and halved
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Glaze
  1. In a saucepan over medium heat, combine the cherries, balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper. Bring to a simmer.
  2. Cook for about 10 minutes, stirring occasionally, until the mixture thickens slightly. Remove from heat and set aside.
Cook the Chicken
  1. Heat a skillet over medium-high heat. Add a little olive oil if needed.
  2. Season the chicken breasts with salt and pepper. Place them in the skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown.
Glaze the Chicken
  1. Once the chicken is cooked, pour the cherry balsamic glaze over the chicken in the skillet.
  2. Let it simmer for an additional 2-3 minutes, allowing the chicken to absorb the flavors.
Serve
  1. Remove the chicken from the skillet and serve hot, drizzled with extra glaze if desired.
