Prepare the Spaghetti Squash
- Preheat the oven to 400°F (200°C). Place the halved spaghetti squash cut-side down on a baking sheet and roast for 30-35 minutes until tender.
- Once cooked, let it cool slightly, then use a fork to scrape the flesh into spaghetti-like strands.
Make the Filling
- In a mixing bowl, combine the shredded chicken, steamed broccoli, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Stuff the Squash
- Spoon the chicken and broccoli mixture into the spaghetti squash halves, filling them generously.
Bake the Stuffed Squash
- Return the stuffed squash to the oven and bake for an additional 10-15 minutes until heated through and the cheese is melted.
Serve
- Remove from the oven, let cool for a few minutes, then serve warm.
