Ingredients
  

Spaghetti Squash
  • 1 medium spaghetti squash halved lengthwise and seeds removed
Filling
  • 2 cups cooked chicken shredded
  • 1 cup broccoli florets steamed
  • 1 cup cheddar cheese shredded
  • 1/2 cup cream cheese softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Spaghetti Squash
  1. Preheat the oven to 400°F (200°C). Place the halved spaghetti squash cut-side down on a baking sheet and roast for 30-35 minutes until tender.
  2. Once cooked, let it cool slightly, then use a fork to scrape the flesh into spaghetti-like strands.
Make the Filling
  1. In a mixing bowl, combine the shredded chicken, steamed broccoli, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Stuff the Squash
  1. Spoon the chicken and broccoli mixture into the spaghetti squash halves, filling them generously.
Bake the Stuffed Squash
  1. Return the stuffed squash to the oven and bake for an additional 10-15 minutes until heated through and the cheese is melted.
Serve
  1. Remove from the oven, let cool for a few minutes, then serve warm.
