Ingredients
  

Chicken and Dressing
  • 2 cups grilled chicken breast, sliced
  • 1/2 cup Caesar dressing store-bought or homemade
Crispy Rice
  • 2 cups cooked rice preferably day-old
  • 2 tablespoons olive oil for frying
  • 1/4 teaspoon salt
Salad Ingredients
  • 4 cups romaine lettuce, chopped
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup croutons optional
  • 1/4 cup cherry tomatoes, halved

Method
 

Prepare the Crispy Rice
  1. Heat olive oil in a frying pan over medium heat. Add the cooked rice and spread it out evenly.
  2. Cook for about 5-7 minutes until the rice is golden and crispy, stirring occasionally. Season with salt.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper.
  2. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from the grill and slice.
Assemble the Salad
  1. In a large bowl, combine the chopped romaine lettuce, grilled chicken, cherry tomatoes, and Caesar dressing. Toss to combine.
  2. Add the crispy rice on top and sprinkle with parmesan cheese and croutons if using. Serve immediately.
