Ingredients
  

Filling
  • 3 cups shredded chicken
  • 1/2 cup refried beans
  • 3/4 cup Greek yogurt
  • 1 tbsp taco seasoning
  • 1 cup shredded Mexican cheese divided
Assembly
  • 8 oz. red enchilada sauce 10 oz. can
  • 8 pieces flour tortillas 8-inch

Method
 

Filling Preparation
  1. In a bowl, mix shredded chicken, refried beans, Greek yogurt, taco seasoning, and 1 cup of shredded cheese.
Sauce Preparation
  1. Spread a little enchilada sauce on the bottom of a baking dish.
Assembly
  1. Place a tortilla on a flat surface, add filling, roll tightly, and place seam-side down in the dish. Repeat.
Topping
  1. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
Baking
  1. Preheat oven to 350°F (175°C), bake for 20-25 minutes until cheese is bubbly.
