Method
Prepare the Chicken
- Pound the chicken breasts to an even thickness using a meat mallet.
- Season both sides of the chicken breasts with salt and black pepper.
Cook the Chicken
- In a skillet, heat olive oil over medium-high heat.
- Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
Make the Mushroom Sauce
- In the same skillet, add sliced mushrooms and sauté for about 5 minutes until browned.
- Add minced garlic and cook for an additional minute until fragrant.
- Pour in the Madeira wine and scrape the bottom of the skillet to deglaze.
- Add chicken broth and simmer for about 10 minutes until the sauce reduces slightly.
- Stir in butter until melted and the sauce is glossy.
Combine and Serve
- Return the chicken to the skillet and coat with the sauce.
- Garnish with chopped parsley and serve hot on a platter.
