Ingredients
  

Chicken and Seasoning
  • 4 pieces boneless, skinless chicken breasts pounded to even thickness
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon olive oil for cooking
Mushroom Sauce
  • 8 ounces cremini mushrooms sliced
  • 2 cloves garlic minced
  • 1 cup Madeira wine or substitute with Marsala
  • 1 cup chicken broth low sodium
  • 1 tablespoon butter for finishing sauce
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

Prepare the Chicken
  1. Pound the chicken breasts to an even thickness using a meat mallet.
  2. Season both sides of the chicken breasts with salt and black pepper.
Cook the Chicken
  1. In a skillet, heat olive oil over medium-high heat.
  2. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside.
Make the Mushroom Sauce
  1. In the same skillet, add sliced mushrooms and sauté for about 5 minutes until browned.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Pour in the Madeira wine and scrape the bottom of the skillet to deglaze.
  4. Add chicken broth and simmer for about 10 minutes until the sauce reduces slightly.
  5. Stir in butter until melted and the sauce is glossy.
Combine and Serve
  1. Return the chicken to the skillet and coat with the sauce.
  2. Garnish with chopped parsley and serve hot on a platter.
