Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts pounded to 1/2 inch thickness
Coating
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup grated Romano cheese
  • 1 cup breadcrumbs preferably Italian seasoned
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Cooking
  • 1/4 cup olive oil for frying

Method
 

Prepare Chicken
  1. Preheat the oven to 400°F (200°C).
  2. Pound the chicken breasts to an even thickness of about 1/2 inch.
Coat Chicken
  1. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of Romano cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
  2. Dredge each chicken breast in flour, dip in the egg, and then coat with the cheese and breadcrumb mixture.
Cook Chicken
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the coated chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through.
  3. Transfer the chicken to a baking sheet and finish in the preheated oven for 10 minutes.
Serve
  1. Remove from the oven and let rest for a few minutes before serving.
  2. Serve hot with pasta or a fresh salad.

Notes
