  • 1 cup orzo pasta
  • 2 cups broccoli florets fresh or frozen
  • 4 cups chicken broth low sodium
  • 2 tablespoons olive oil
  • 1 teaspoon garlic minced
  • 1 teaspoon Italian seasoning

Method
 

Cooking the Sausage and Broccoli
  1. In a large pot, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5 minutes.
  2. Add the minced garlic and Italian seasoning, stirring for about 1 minute until fragrant.
  3. Stir in the broccoli florets and cook for another 2 minutes.
Cooking the Orzo
  1. Pour in the chicken broth and bring to a boil.
  2. Add the orzo pasta and reduce heat to a simmer. Cook for 10-12 minutes, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed.
Finishing Touches
  1. Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese if desired.
