Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 cup semisweet chocolate chips melted
  • 2 large eggs
  • 1 tsp vanilla extract

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a greased 9x9 inch baking pan. Bake for 10 minutes, then remove from the oven and let cool.
Make the filling
  1. In a large mixing bowl, beat the softened cream cheese and sugar together until smooth using an electric mixer.
  2. Add the melted chocolate, eggs, and vanilla extract. Mix until fully combined and smooth.
Bake the bars
  1. Pour the filling over the cooled crust and spread evenly. Bake for 20 minutes or until the center is set.
  2. Remove from the oven and let cool completely in the pan before cutting into bars.
