Ingredients
  

Corn Nugget Mixture
  • 1 cup corn fresh or canned, drained
  • 1/2 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 large egg beaten
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cheddar cheese shredded
Frying
  • 2 cups vegetable oil for frying

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine corn, cornmeal, flour, beaten egg, milk, baking powder, salt, pepper, and cheddar cheese. Mix well until combined.
  2. Let the mixture rest for about 5 minutes.
Fry the Nuggets
  1. Heat vegetable oil in a frying pan over medium heat.
  2. Using a spoon, drop small amounts of the corn mixture into the hot oil.
  3. Fry until golden brown, about 3-4 minutes on each side.
  4. Remove the nuggets with a slotted spoon and drain on paper towels.
Serve
  1. Serve hot with your favorite dipping sauce.
