Salad Base
  • 1 cup cottage cheese preferably low-fat
  • 1 can chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced peeled if desired
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the cottage cheese, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
  3. Pour the dressing over the salad mixture and gently toss to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving for enhanced flavors.
