  • ¼ cup pure maple syrup
  • 1 teaspoon vanilla
  • 1 cup almond flour
  • 2 tablespoons melted coconut oil
  • ½ cup vanilla protein powder
  • ½ cup chocolate chips plus more for topping

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, mix cottage cheese, maple syrup, coconut oil, and vanilla until smooth.
  4. In another bowl, combine almond flour and protein powder.
  5. Gradually add dry ingredients to wet ingredients and mix until combined.
  6. Fold in chocolate chips.
  7. Drop rounded tablespoons of dough onto the baking sheet.
  8. Bake for 12-15 minutes until edges are golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
