Ingredients
  

Egg Mixture
  • 6 large Eggs Beaten
  • 1 cup Cottage Cheese Low-fat or regular
  • 1 cup Spinach Chopped, fresh or frozen
  • 1/2 cup Bell Pepper Diced
  • 1/2 cup Cheddar Cheese Shredded
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method
 

Prepare the Oven and Muffin Tin
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
Mix Ingredients
  1. In a mixing bowl, whisk together the eggs, cottage cheese, salt, and pepper until well combined.
  2. Fold in the chopped spinach, diced bell pepper, and shredded cheddar cheese.
Fill Muffin Tin
  1. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake
  1. Bake in the preheated oven for 20 minutes, or until the egg bites are set and lightly golden on top.
Cool and Serve
  1. Allow the egg bites to cool for a few minutes before removing them from the muffin tin. Serve warm or store in the refrigerator.
