Ingredients
  

Cottage Cheese Base
  • 2 cups cottage cheese preferably low-fat
  • 1 cup milk whole or low-fat
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Vegetable Additions
  • 1 cup spinach fresh or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup zucchini diced
Pasta
  • 12 ounces pasta any type, such as penne or spaghetti

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a saucepan, heat a little olive oil over medium heat.
Make the Sauce
  1. In a blender, combine cottage cheese, milk, garlic powder, onion powder, salt, and black pepper. Blend until smooth.
  2. Pour the blended mixture into the saucepan and heat gently.
Combine and Serve
  1. Add the spinach, cherry tomatoes, and zucchini to the sauce. Cook for about 5 minutes until the vegetables are tender.
  2. Toss the cooked pasta with the sauce and serve hot.
