Ingredients
  

Mousse Base
  • 1 cup cottage cheese preferably low-fat
  • 1/2 cup peanut butter smooth or crunchy
  • 1/4 cup honey or maple syrup for sweetness
  • 1 teaspoon vanilla extract
Toppings
  • 1/4 cup chopped nuts such as peanuts or almonds
  • 1/4 cup dark chocolate chips optional

Method
 

Prepare the Mousse
  1. In a blender, combine the cottage cheese, peanut butter, honey, and vanilla extract.
  2. Blend until smooth and creamy, scraping down the sides as needed.
Serve
  1. Spoon the mousse into serving cups and refrigerate for at least 30 minutes to set.
  2. Before serving, top with chopped nuts and dark chocolate chips if desired.
