Ingredients
  

Filling
  • 2 cups cooked chicken shredded
  • 8 oz cream cheese softened
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp pepper
Taquito Assembly
  • 10 small corn tortillas
  • 1 tbsp olive oil for brushing

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the shredded chicken, cream cheese, shredded cheese, garlic powder, onion powder, cumin, salt, and pepper. Mix until well combined.
  2. Preheat the oven to 400°F (200°C).
Assemble the Taquitos
  1. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side to make them pliable.
  2. Place about 2 tablespoons of the chicken filling on one end of each tortilla and roll tightly.
  3. Place the rolled taquitos seam-side down on a baking sheet.
  4. Brush the tops of the taquitos with olive oil.
Bake the Taquitos
  1. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
  2. Remove from the oven and let cool slightly before serving.
