  • 1/2 cup ranch dressing or blue cheese dressing
Vegetables
  • 1 large head cauliflower cut into florets
Meat
  • 2 cups cooked chicken breast shredded
Sauces
  • 1 cup buffalo sauce adjust to taste
Cheeses
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
Garnishes
  • 3 tablespoons green onions chopped
  • salt to taste
  • pepper to taste
  • fresh parsley or chives chopped, for garnish

Method
 

Preparation
  1. Boil cauliflower florets in salted water for 5-7 minutes until tender. Drain and cool.
  2. In a bowl, mix ranch dressing, buffalo sauce, and half of the cheddar and mozzarella cheeses.
  3. Add chicken and cauliflower to the mixture, fold gently, and season with salt and pepper.
Baking
  1. Preheat oven to 350°F (175°C). Transfer mixture to a greased 9x13 inch baking dish and top with remaining cheeses.
  2. Bake for 25-30 minutes until cheese is bubbly and golden.
  3. Let cool slightly, garnish with green onions and parsley, then serve.
