- Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Season salmon with salt and pepper, then sear for 4-5 minutes on each side until cooked through. Remove and set aside.
- In the same skillet, add remaining butter, garlic, and onion. Sauté until fragrant.
- Add sun-dried tomatoes and half and half. Stir and simmer for 2-3 minutes.
- Season with salt, pepper, and add spinach. Cook until wilted.
- If using, mix cornstarch with water and add to sauce to thicken.
- Return salmon to skillet, spoon sauce over, and heat through. Garnish with parsley.

Notes
Feel free to replace sun-dried tomatoes with roasted red peppers or switch baby spinach for kale. A sprinkle of red pepper flakes can add a kick to elevate the dish.
