Ingredients
  

  • 4 fillets salmon, skin off
  • 1 pinch salt to season
  • 1 pinch pepper
  • 2 teaspoons olive oil
  • 2 tablespoons butter
  • 6 cloves garlic, finely diced
  • 1 medium yellow onion, diced
  • 5 ounces sun-dried tomato strips, drained
  • 1.75 cups half and half
  • 1 pinch salt to taste
  • 1 pinch pepper to taste
  • 3 cups baby spinach leaves
  • 0.5 cup parmesan cheese, fresh grated
  • 1 teaspoon cornstarch mixed with water (optional)
  • 1 tablespoon fresh parsley, chopped

Method
 

  1. Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Season salmon with salt and pepper, then sear for 4-5 minutes on each side until cooked through. Remove and set aside.
  2. In the same skillet, add remaining butter, garlic, and onion. Sauté until fragrant.
  3. Add sun-dried tomatoes and half and half. Stir and simmer for 2-3 minutes.
  4. Season with salt, pepper, and add spinach. Cook until wilted.
  5. If using, mix cornstarch with water and add to sauce to thicken.
  6. Return salmon to skillet, spoon sauce over, and heat through. Garnish with parsley.

Notes
