  • 1 cup fresh strawberries hulled and sliced

Preparation Instructions
  1. Preheat oven to 350°F (175°C). Line a 9x9-inch baking dish with baking paper.
  2. Combine almond flour, melted butter, and 3 tablespoons erythritol in a bowl. Mix until crumbly and press into the bottom of the baking dish.
  3. Bake crust for 10-12 minutes until lightly golden.
  4. In a bowl, beat cream cheese until smooth. Add heavy cream, erythritol, and vanilla extract. Mix until combined.
  5. Fold in sliced strawberries. Pour filling over the crust and smooth out.
  6. Bake for 30-35 minutes until edges are set but center is slightly jiggly.
  7. Cool for 10 minutes, then refrigerate for at least 4 hours or overnight.
