- Preheat oven to 350°F (175°C). Line a 9x9-inch baking dish with baking paper.
- Combine almond flour, melted butter, and 3 tablespoons erythritol in a bowl. Mix until crumbly and press into the bottom of the baking dish.
- Bake crust for 10-12 minutes until lightly golden.
- In a bowl, beat cream cheese until smooth. Add heavy cream, erythritol, and vanilla extract. Mix until combined.
- Fold in sliced strawberries. Pour filling over the crust and smooth out.
- Bake for 30-35 minutes until edges are set but center is slightly jiggly.
- Cool for 10 minutes, then refrigerate for at least 4 hours or overnight.
