Ingredients
  

Pasta
  • 12 oz fettuccine or pasta of choice
Chicken
  • 2 cups cooked chicken breast shredded or diced
Sauce
  • 1 cup heavy cream or half-and-half
  • 1 cup chicken broth low sodium
  • 1 cup parmesan cheese grated
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon lemon zest freshly grated
  • 2 cloves garlic minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 2 tablespoons olive oil for cooking
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
Prepare Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream, lemon juice, lemon zest, salt, and pepper.
  3. Allow the sauce to simmer for about 5 minutes until slightly thickened.
  4. Stir in the grated parmesan cheese until melted and smooth.
Combine
  1. Add the cooked chicken and drained pasta to the sauce. Toss to coat evenly.
  2. Cook for an additional 2-3 minutes until everything is heated through.
Serve
  1. Garnish with chopped parsley and serve immediately.

Notes
