Ingredients
  

Soup Base
  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 2 cups baby spinach fresh

Method
 

Prepare the Soup
  1. In a large pot over medium heat, add the Italian sausage and cook until browned, breaking it apart with a wooden spoon, about 5 minutes.
  2. Add the diced onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Reduce heat to a simmer and add the heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Stir until well combined.
  6. Add the baby spinach and cook for another 2-3 minutes until wilted.
  7. Taste and adjust seasoning if necessary before serving.
