  • 2 cups cream cheese softened
  • 1.25 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 0.5 cups sour cream
  • 1 tablespoon lemon juice
Raspberry Sauce
  • 0.25 cups sugar
  • 3 tablespoons milk
  • 0.5 cups water
  • 0.5 cups sugar

Method
 

Crust Preparation
  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes and let cool.
Filling Preparation
  1. Beat cream cheese until smooth. Gradually add sugar, mixing until combined. Add eggs one at a time, mixing on low speed. Avoid overmixing.
  2. Mix in sour cream, vanilla, lemon juice, and raspberries gently.
Baking and Cooling
  1. Pour filling over crust. Bake for 50-60 minutes until edges are set but center jiggles. Cool in oven for 1 hour.
  2. Refrigerate for at least 4 hours. Remove from springform pan, slice, and serve.
Raspberry Sauce Preparation
  1. Combine ¼ cup sugar, milk, water, and remaining sugar in a saucepan. Cook until sugar dissolves.
