  • 500 grams boneless, skinless chicken breasts, cut into bite-sized pieces
  • 250 grams ricotta cheese
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Italian seasoning or red pepper flakes optional

Method
 

  1. Boil salted water in a large pot. Add pasta and cook until al dente, about 8-10 minutes. Reserve 120 ml pasta water, then drain.

  3. Add ricotta cheese to the skillet with reserved pasta water. Whisk until smooth and creamy. Add optional seasonings if desired.
  4. Combine cooked pasta with the sauce and chicken. Toss to coat evenly.
