  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped (about ½ cup)
  • 2 cloves garlic, finely minced
  • 2.5 cups low-sodium chicken broth
  • 2 cans diced green chilies (4 oz each)
  • 1.5 teaspoons ground cumin
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon paprika
  • 1/2 small lime, juice
  • salt to taste
  • freshly ground black pepper to taste
  • 2 cans great northern beans (15 oz each)
  • 1 cup sour cream or plain Greek yogurt
  • 1 cup corn (frozen or fresh)
  • 2 heaping cups cooked chicken, shredded

Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic and cook for another minute.
  3. Pour in chicken broth, then add diced green chilies, cumin, cayenne pepper, oregano, paprika, lime juice, salt, and pepper. Stir well.
  4. Add great northern beans, corn, and shredded chicken. Mix thoroughly.
  5. Bring to a gentle boil, then reduce heat and simmer for 20-25 minutes.
  6. Stir in sour cream or Greek yogurt until well combined. Adjust seasoning if necessary.
  7. Serve hot, garnished with cilantro, shredded cheese, and tortilla chips.
