Ingredients
  

Chicken and Seasoning
  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons olive oil
Sauce Ingredients
  • 8 ounces mushrooms sliced
  • 3 cloves garlic minced
  • 1 cup white wine dry
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt and black pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
Make the Sauce
  1. In the same skillet, add the sliced mushrooms and cook for about 5 minutes until they are browned.
  2. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Pour in the white wine, scraping the bottom of the skillet to deglaze, and let it simmer for 3-4 minutes.
  4. Stir in the heavy cream and dried thyme, and let it simmer for another 5 minutes until the sauce thickens.
Combine and Serve
  1. Return the cooked chicken to the skillet, coating it in the creamy sauce.
  2. Cook for an additional 2-3 minutes to heat through.
  3. Garnish with fresh parsley before serving.
  4. Serve warm with your choice of side dishes.
