Ingredients
  

Potatoes
  • 2 pounds baby potatoes or small Yukon Gold potatoes
Garlic
  • 4 cloves garlic minced
Cheese
  • 1 cup Parmesan cheese grated
Oil
  • 1/4 cup olive oil for drizzling
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon dried rosemary optional

Method
 

Prepare the Potatoes
  1. Preheat the oven to 450°F (230°C).
  2. Boil the baby potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.
Smash and Season
  1. Drain the potatoes and let them cool slightly.
  2. On a baking sheet, place the potatoes and gently smash each one with a fork or the bottom of a glass.
  3. Drizzle the smashed potatoes with olive oil and sprinkle with minced garlic, salt, pepper, and rosemary.
Bake
  1. Bake in the preheated oven for 25-30 minutes, until crispy and golden brown.
  2. Remove from the oven and immediately sprinkle with grated Parmesan cheese.
Serve
  1. Let cool for a few minutes before serving. Enjoy your crispy baked smashed potatoes!
