Ingredients
  

Salmon Bites
  • 1 lb salmon fillet cut into bite-sized pieces
  • 1 cup panko breadcrumbs for extra crispiness
  • 1 large egg beaten
  • 1 tsp salt
  • 1 tsp black pepper
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp Sriracha adjust to taste
  • 1 tsp lime juice

Method
 

Prepare the Salmon Bites
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the panko breadcrumbs, salt, and pepper.
  3. Dip each salmon piece into the beaten egg, then coat with the breadcrumb mixture.
  4. Place the coated salmon bites on a baking sheet lined with parchment paper.
Bake the Salmon Bites
  1. Bake in the preheated oven for 12-15 minutes, or until golden brown and cooked through.
Make the Bang Bang Sauce
  1. In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth.
Serve
  1. Serve the crispy salmon bites hot with the Bang Bang sauce on the side for dipping.

Notes
