Ingredients
  

Gnocchi
  • 1 pound potato gnocchi store-bought or homemade
Vegetables
  • 4 cups fresh spinach washed and chopped
Cheese
  • 1 cup feta cheese crumbled
Seasoning
  • 3 tablespoons olive oil for frying
  • 2 cloves garlic minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Gnocchi
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add the potato gnocchi and cook until they are golden brown and crispy, about 5-7 minutes, stirring occasionally.
Add Spinach and Garlic
  1. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  2. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
Combine and Serve
  1. Remove the skillet from heat and stir in the crumbled feta cheese.
  2. Season with salt and black pepper to taste, and serve warm.
