Ingredients
  

Artichoke Hearts
  • 2 cans artichoke hearts drained and rinsed
Breading Mixture
  • 1 cup Panko breadcrumbs for extra crunch
  • 1/2 cup grated Parmesan cheese freshly grated
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Egg Mixture
  • 2 large eggs beaten
  • 1 tablespoon water
Cooking Spray
  • 1 tablespoon olive oil spray for baking

Method
 

Prepare the Oven and Baking Sheet
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Make the Breading Mixture
  1. In a mixing bowl, combine Panko breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper.
Prepare the Artichokes
  1. In another bowl, whisk together the beaten eggs and water. Dip each artichoke heart into the egg mixture, then coat with the breadcrumb mixture.
Bake the Artichokes
  1. Place the coated artichoke hearts on the prepared baking sheet. Spray lightly with olive oil. Bake in the preheated oven for 20-25 minutes or until golden and crispy.
Serve
  1. Remove from the oven and let cool slightly before serving. Enjoy with your favorite dipping sauce.
