Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Sauce
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice about 2 lemons
  • 2 tablespoons capers drained
  • 2 tablespoons butter cut into small pieces
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Garnish
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

Prepare Chicken
  1. Season the chicken breasts with salt and pepper on both sides.
  2. Place the seasoned chicken breasts in the crockpot.
Make Sauce
  1. In a bowl, mix together chicken broth, lemon juice, capers, garlic, oregano, salt, and pepper.
  2. Pour the sauce mixture over the chicken in the crockpot.
  3. Dot the top with pieces of butter.
Cook
  1. Cover and cook on low for 4-5 hours or until the chicken is cooked through and tender.
Serve
  1. Once cooked, remove the chicken and place on a serving platter.
  2. Spoon the sauce over the chicken and garnish with chopped parsley before serving.
