Marinade
  • 3/4 cup extra-virgin olive oil
  • 1 tablespoon orange zest
  • 3/4 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 1 cup cilantro, finely chopped
  • 1/4 cup mint leaves, finely chopped lightly packed
  • 8 cloves garlic, minced
  • 1 tablespoon minced oregano
  • 2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • Kosher salt and pepper
Beef
  • 3 1/2 pounds boneless beef shoulder in one piece

Method
 

Marinating
  1. In a large bowl, combine olive oil, orange zest, orange juice, lime juice, cilantro, mint, garlic, oregano, cumin, salt, and pepper.
  2. Place beef in a resealable bag or dish and pour marinade over it. Seal and refrigerate for at least 2 hours, preferably overnight.
Cooking
  1. Preheat grill or oven to medium-high heat.
  2. Remove beef from marinade, letting excess drip off. Grill for 6-8 minutes per side for medium-rare or roast until cooked to desired doneness.
  3. Let beef rest for 10 minutes before slicing against the grain.
