Marinating
- In a large bowl, combine olive oil, orange zest, orange juice, lime juice, cilantro, mint, garlic, oregano, cumin, salt, and pepper.
- Place beef in a resealable bag or dish and pour marinade over it. Seal and refrigerate for at least 2 hours, preferably overnight.
Cooking
- Preheat grill or oven to medium-high heat.
- Remove beef from marinade, letting excess drip off. Grill for 6-8 minutes per side for medium-rare or roast until cooked to desired doneness.
- Let beef rest for 10 minutes before slicing against the grain.
