Salad Base
  • 2 cups cucumber diced
  • 1 cup blueberries fresh
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1 pinch salt
  • 1 pinch black pepper
Garnish
  • 1 tablespoon fresh mint chopped

Method
 

Prepare the Salad
  1. In a mixing bowl, combine the diced cucumbers and fresh blueberries.
  2. In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and black pepper.
  3. Pour the dressing over the cucumber and blueberry mixture and toss gently to combine.
  4. Garnish with chopped fresh mint before serving.
