  • 4 pieces Anchovies

  • ½ cup Mayonnaise optional
  • 2 tbsp Tahini
  • 1 tsp Worcestershire sauce
  • ½ tsp Black pepper freshly cracked
  • ½ tsp Salt

Method
 

  1. Start by washing the cucumbers thoroughly. Slice them thinly into rounds or half-moons, depending on your preference.
  2. Rinse the romaine lettuce leaves, then chop them into bite-sized pieces. Place them in a large salad bowl.
  3. In a small bowl, mix together tahini, minced garlic, lemon juice, and Worcestershire sauce. Stir until smooth. For a creamier texture, you can add a spoonful of mayonnaise. Season with salt and pepper to taste.
  4. Toss the sliced cucumbers into the bowl with the romaine. Add the croutons and gently combine.
  5. Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
  6. Sprinkle the freshly grated Parmesan cheese on top of the salad. For extra flavor, add a few more cracks of black pepper.
  7. Serve immediately to keep the lettuce crisp and the cucumbers refreshing.
