  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 Tbsp extra-virgin olive oil
Main Ingredients
  • 1 large head cauliflower chopped into florets
  • 1 15-oz. can chickpeas rinsed and drained
  • 2 cups cooked white basmati rice
Toppings
  • thinly sliced cucumber optional
  • halved cherry tomatoes optional
Sauce Ingredients
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh parsley leaves
  • 1/4 cup tahini
  • 2 Tbsp fresh lemon juice
  • 1/2 tsp minced garlic
  • 1/4 tsp ground cumin
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Method
 

Preparation
  1. Preheat oven to 425°F (220°C).
  2. In a bowl, combine olive oil, curry powder, paprika, cumin, salt, and pepper.
  3. Toss cauliflower and chickpeas in the spice mixture until coated.
  4. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
  5. Cook basmati rice according to package instructions.
  6. For the sauce, blend cilantro, parsley, tahini, lemon juice, garlic, cumin, salt, and pepper until smooth.
  7. Assemble bowls with rice, roasted cauliflower, chickpeas, and optional toppings. Drizzle with green tahini sauce.
