- In a bowl, mix shredded chicken, refried beans, Greek yogurt, taco seasoning, and 1 cup of shredded cheese for the filling.
- Spread a little enchilada sauce on the bottom of a baking dish.
- Place a tortilla on a flat surface, add filling, roll tightly, and place seam-side down in the dish. Repeat.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
- Preheat oven to 350°F (175°C) and bake for 20-25 minutes until cheese is bubbly.
