Ingredients
  

  • 1/2 cup refried beans
  • 3/4 cup Greek yogurt
  • 1 tbsp taco seasoning
  • 3 cups shredded chicken
  • 1.5 cups shredded Mexican cheese divided
  • 10 oz. red enchilada sauce
  • 8 flour tortillas tortillas (8-inch)

Method
 

  1. In a bowl, mix shredded chicken, refried beans, Greek yogurt, taco seasoning, and 1 cup of shredded cheese for the filling.
  2. Spread a little enchilada sauce on the bottom of a baking dish.
  3. Place a tortilla on a flat surface, add filling, roll tightly, and place seam-side down in the dish. Repeat.
  4. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  5. Preheat oven to 350°F (175°C) and bake for 20-25 minutes until cheese is bubbly.
