- Boil cauliflower florets in salted water for 5-7 minutes until tender. Drain and cool.
- In a bowl, mix ranch dressing, buffalo sauce, and half of the cheddar and mozzarella cheeses.
- Add chicken and cauliflower to the mixture, fold gently, and season with salt and pepper.
- Preheat oven to 350°F (175°C). Transfer mixture to a greased 9x13 inch baking dish and top with remaining cheeses.
- Bake for 25-30 minutes until cheese is bubbly and golden.
- Let cool slightly, garnish with green onions and parsley, then serve.
