Noodles
  • 250 grams medium wide rice noodles dried
Chicken
  • 250 grams chicken thighs or chicken breast
Sauces and Oils
  • 1 teaspoon soy sauce
  • 3 tablespoons vegetable or canola oil divided
  • 1 tablespoon fish sauce
  • 1 teaspoon fish sauce
  • 3 teaspoons soy sauce
  • 1.5 teaspoons dark soy sauce
  • 2 teaspoons oyster sauce
  • 2 teaspoons brown sugar
  • 1 pinch ground white pepper
Vegetables
  • 1 cup holy basil
  • 2-3 Thai red chili peppers
  • ½ onion sliced
  • 4-5 baby bok choy
Others
  • ¼ cup chicken stock or water
  • 1 tablespoon minced garlic

Method
 

Cooking Steps
  1. Prepare the noodles according to package instructions; drain and set aside.
  2. In a wok, heat 1 tablespoon of oil over medium-high heat. Add chicken and cook until browned. Remove and set aside.
  3. In the same wok, add remaining oil, garlic, and onion; stir-fry until fragrant.
  4. Add chili peppers and baby bok choy; stir-fry until bok choy is tender.
  5. Return chicken to the wok with noodles. Add stir fry sauce ingredients and mix well.
  6. Toss in holy basil and stir until just wilted.
