Ingredients
  

  • 1 3/4 cups cottage cheese
  • 4 large eggs
  • 1/4 cup chives
  • 1/4 cup parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 lb chicken shredded or cut into 1/2-inch cubes
  • 2 1/2 tablespoons pesto
  • 1/2 cup hummus
  • 2/3 cup tomatoes diced
  • 2 1/2 oz arugula

Method
 

  1. In a bowl, mix cottage cheese, eggs, chives, parsley, garlic powder, and black pepper.
  2. In a skillet, heat olive oil and cook chicken until done. Stir in pesto.
  3. Spread hummus on a tortilla, add cottage cheese mixture, then layer chicken, tomatoes, and arugula.
  4. Roll tightly, chill for 30 minutes, then slice into pinwheels.
