Shrimp and Sauce
  • 1 pound large shrimp
  • 2 tablespoons olive oil for marinating and sautéing
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 1 bunch asparagus about 1 pound
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 tablespoon lemon juice
  • 1/4 cup grated Parmesan cheese
  • 2 cups cooked rice or quinoa as base for the bowl

Cooking Directions
  1. Rinse shrimp under cold water and pat dry. Combine shrimp with olive oil, paprika, salt, and pepper. Marinate for 15 minutes.
  2. Blanch asparagus in boiling salted water for 2-3 minutes. Transfer to an ice bath, then drain.
  3. Sauté minced garlic in olive oil until fragrant. Add heavy cream and bring to a simmer. Stir in lemon juice, Parmesan, salt, and pepper. Mix in blanched asparagus.
  4. Preheat grill. Cook marinated shrimp for 2-3 minutes on each side until pink.
  5. Assemble bowl with rice or quinoa, top with creamy asparagus sauce, and grilled shrimp.
