Method
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together flour, baking soda, and salt. Set aside.
- In another bowl, mix sugar, vegetable oil, and eggs until well combined. Stir in vanilla extract.
- Drain excess liquid from crushed pineapple and fold it into the wet mixture.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Transfer the batter into the prepared loaf pan, smoothing the top.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from oven and allow to cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
