Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 1 cup canned crushed pineapple drained

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan or line it with parchment paper.
  3. In a large bowl, whisk together flour, baking soda, and salt. Set aside.
  4. In another bowl, mix sugar, vegetable oil, and eggs until well combined. Stir in vanilla extract.
  5. Drain excess liquid from crushed pineapple and fold it into the wet mixture.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Transfer the batter into the prepared loaf pan, smoothing the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  9. Remove from oven and allow to cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
