- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, and salt.
- In another bowl, beat cream cheese and sugar until smooth. Add vanilla, egg, and sour cream, mixing well.
- Fold in crushed pineapple. Combine wet and dry ingredients until just mixed.
- Pour batter into greased loaf pan. Bake for 50-60 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a cooling rack.
- For the glaze, mix powdered sugar with reserved pineapple juice until smooth. Drizzle over cooled bread.
