Preparing the Bars
- Preheat the oven to 350°F and line a 9×9 pan with parchment.
- Mix the melted butter and sugar in a mixing bowl. Add the eggs and vanilla extract, then mix until combined.
- In another bowl, whisk together the flour, cocoa powder, salt, and baking powder. Combine the dry ingredients with the wet ingredients.
- Spread the brownie mixture into the prepared pan and bake for 12 minutes.
- While the crust is baking, beat the cream cheese in a mixing bowl until smooth. Add sugar, eggs, vanilla, and sour cream. Mix until well incorporated.
- Fold in the diced strawberries gently into the cheesecake filling.
- Reserve 1/3 cup of cheesecake batter. Pour the remaining filling over the baked brownie crust.
- Mix the reserved batter with the strawberry puree. Dollop and swirl it gently on top of the cheesecake filling.
- Bake for an additional 30–35 minutes. Once baked, cool completely, then chill for at least 4 hours.
- Before serving, drizzle with melted chocolate and top with fresh strawberry halves. Slice into bars.
