Chicken Filling
  • 1 lb ground chicken
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt to taste
  • black pepper to taste
Taco Assembly
  • 8 small tortillas
  • 1 cup shredded mozzarella or Jack cheese
  • 1/2 cup chopped dill pickles
  • 2 tbsp pickle brine
  • 1 cup shredded cabbage
  • 1/2 cup cottage cheese blended with 1 tsp ranch seasoning and a squeeze of lemon

Method
 

Cooking Process
  1. Mix ground chicken with garlic powder, paprika, salt, and pepper.
  2. Form the mixture into patties and cook in a skillet over medium heat until done.

  4. In the same skillet, sprinkle cheese to form a lace and cook until crispy.
  5. Warm tortillas in the skillet.
  6. Assemble tacos with smashed chicken, dill pickles, cabbage, and cottage cheese mixture.
  7. Top with crispy cheese lace and serve.
