Rice and Chicken
  • 2 cups long grain white rice
  • 4 cups chicken broth
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 2 cloves minced garlic
  • 1 cup grated cucumber
  • 2 tablespoons dill
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1 cup cucumber substitute (diced zucchini or bell pepper)

Cooking Instructions
  1. Preheat oven to 375°F (190°C).
  2. In a baking dish, spread uncooked rice evenly.
  3. Place chicken on rice and pour chicken broth over it.
  4. In a bowl, mix Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, pepper, oregano, and paprika.
  5. Cover dish with foil and bake for 30-35 minutes.
  6. Remove foil, spread tzatziki sauce over chicken, and bake uncovered for an additional 10 minutes.
  7. Let rest before serving.
