Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
Sauce
  • 1/2 cup bourbon or whiskey
  • 1/4 cup soy sauce low sodium preferred
  • 1/4 cup brown sugar packed
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
Vegetables
  • 1 cup green bell pepper sliced
  • 1 cup onion sliced
  • 1 cup broccoli florets
Oil
  • 2 tablespoons vegetable oil

Method
 

Prepare the Chicken
  1. Heat the vegetable oil in a skillet over medium-high heat.
  2. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
Make the Sauce
  1. In a bowl, whisk together bourbon, soy sauce, brown sugar, apple cider vinegar, minced garlic, and ground ginger.
Combine and Cook
  1. Add the sliced bell pepper, onion, and broccoli to the skillet with the chicken.
  2. Pour the sauce over the chicken and vegetables, stirring to coat.
  3. Reduce heat to medium and simmer for about 10-15 minutes, until the sauce thickens and the vegetables are tender.
Serve
  1. Serve the bourbon chicken over rice or noodles, garnished with green onions if desired.
