Ingredients
  

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, diced
  • 1 medium onion, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika plus extra for garnish
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup fresh cilantro or parsley, chopped
  • 2 cups cooked rice for serving

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chicken, onion, and garlic; season with salt, pepper, paprika, cumin, and oregano. Cook until chicken is no longer pink, about 5-7 minutes.
  3. In a large bowl, combine cooked chicken mixture with diced zucchini and cilantro.
  4. Transfer to a greased baking dish, and top with breadcrumbs if desired.
  5. Bake for 25-30 minutes until cheese is bubbly and golden brown.
  6. Let cool for 5 minutes before serving over cooked rice.
